From master to apprentice.

Legendary Chef Nancy Silverton first introduced this rare, comfy dish to Los Angeles food enthusiasts at her restaurant Chi Spacca. Her apprentice Chef Cihan Kaymakcalan has gone on to create Glad and further evolved the recipe adding fillings and fresh toppings, and turned it into an unexpected fusion of traditional Italian and Eastern European cuisines.

  • A regular focaccia is a flat Italian bread made with yeast and olive oil and flavored with herbs. What Glad makes is a special type of focaccia, that is called ‘Focaccia di Recco’. Unlike the regular focaccia bread, Di Recco is a stand alone dish with crispy and thin texture with bubbly, cheesy interior.

  • Glad has many different types of focaccias that can be enjoyed on every moment of the day. One with cheese would go great in Brunch, while the meat and veggie ones are perfect for lunch and dinner.

    We are proud to be cooking without highly processed vegetable oils and using only extra virgin olive oil and real butter on our dishes.

  • We currently serve at Smorgasburg on Sundays between 10AM and 4PM, and Silverlake Farmers Market on Saturdays between 8AM and 1:30PM, and Tuesdays between 1:30PM and 7:30PM.
